Nothing is added, it is 100% honey. First I grind up a small batch of already crystallised honey in a pestle and mortar. Once it is smooth and soft I then add this to a larger batch of liquid honey. Over the course of a week or so at cooler temperatures the large batch is now set around the same crystal size as the 'seed' honey.
